Caramelized apple and olive oil cake

For this new recipe, chef Irina Mendonça offers us a gourmet cake with olive oil, to share with the family during the end-of-year celebrations.

List of ingredients:

 For the caramel:

  • 240 grams of white sugar
  • 120 ml of water

  • For the cake:

  • 4 golden apples
  • 150 grams of sugar
  • 3 eggs
  • 120 ml olive oil
  • 170 gr of T45 flour
  • 5 g of yeast
  • 120 ml semi-skimmed milk
  • 1 pinch of cinnamon
  • Mold with a diameter of 26cm
    1. Preheat the oven to 180°C.
    2. Beat the sugar and eggs until white. Sift the flour and add to your sugar and egg mixture, so that this mixture becomes smooth. Add the olive oil, mix again then add the milk. Finally, add the yeast and a pinch of cinnamon. Mix everything again.
    3. Peel the apples and cut them into even strips. If you wish, you can sprinkle your apples with a little lemon juice to prevent them from blackening.
    4. For the caramel, in a saucepan, add the sugar and water. Put on the heat, wait for the sugar to melt and mix from time to time. This may take a few minutes. When it starts to caramelize, mix the caramel constantly. Once your caramel takes on a nice color, remove the pan from the heat.
    5. Your caramel is ready, quickly pour into your mold. This step must be done quite quickly, because the caramel can harden quickly!
    6. Place the rosette apples on top of your caramel, then pour in the cake mixture.
    7. Bake your cake for approximately 20 to 25 minutes at 180° degrees. Insert the blade of a knife to check the cooking.

    You can accompany your cake with vanilla ice cream or Chantilly, enjoy!
