Savory cake with olives, feta and dried tomatoes

Chef Irina Mendonça offers us a summer recipe to brighten up your winter!


List of ingredients :
- 200 gr of flour
- 6g of yeast or ½ sachet
- 3 eggs
- 100ml olive oil
- 100ml of lukewarm milk
- 200 g of Feta
- 60 gr of pitted green or black olives
- 100 gr of dried tomatoes
- 1 clove of garlic
- A few basil leaves (optional)
- Pepper
- Butter for the mold
- Baking paper
- A cake mold

Preparation :
1- Preheat your oven to 180°C. Cut the olives in half, the tomatoes into small pieces, and roughly crumble the feta.
2- Chop the garlic and fry for a few minutes in a pan with the
dried tomatoes and olives.
3- Pour the flour and yeast into a salad bowl. Dig a well then break into it
the eggs and mix with a whisk. Gradually add the warmed milk while
whisking then add the olive oil.
4- Once you have a very homogeneous paste, add the tomatoes,
olives and feta.

I added a few basils leaves to give more of flavor. Add pepper, no need to add salt.
5- Pour into a buttered cake mold lined with baking paper,
Bake for approximately 45 to 50 minutes.

Inserting the blade of a knife to check cooking.
