Orange and olive oil cake

For this new recipe, chef Irina Mendonça offers us a delicious and family-friendly cake.

List of ingredients :

For the cake
- 4 eggs
- 220 gr of sugar
- 200 ml of olive oil
- 200 ml of squeezed orange juice
- 280 gr of T45 flour
- 1 tablespoon of yeast
- Zest of 2 oranges

For the syrup:
- Juice of 3 squeezed oranges
- 2 tablespoons of sugar
- 2 tablespoons of water

1- Preheat the oven to 180°C
2- Beat the sugar and eggs until white. Add little by little
olive oil then orange juice
3- Sift the flour and add to your mixture, it should be very homogeneous.
Finally add the yeast and orange zest. Mix everything again
once. Pour the mixture into a buttered mold
4- Bake your cake for approximately 45 to 50 minutes at 180° degrees
Insert the blade of a knife to check cooking
5- For the syrup, mix all the ingredients and bring to the boil. Leave to
reduce a little then drizzle over the still hot cake
