Chocolate mousse by Chef Irina Mendonça

Chef Irina Mendonça in Manchester (United Kingdom) presents us with an original chocolate mousse combining the pronounced character of dark chocolate with the lightness of olive oil.

List of ingredients:

  • 150 grams of dark chocolate, preferably 75%
  • 50 grams of olive oil
  • 50 grams of sugar
  • 5 eggs


Preparation :

1. First, put the chocolate pieces in a bowl then melt it in a bain-marie.
2. Meanwhile, separate the egg whites from the yolks and beat the egg whites until stiff, while adding a pinch of salt. Beat at high speed until the whites are firm and peaks form when you lift the whisk.
3. Once the melted chocolate is warm, add the olive oil, sugar and egg yolks, then make sure to mix everything well.
4. Gently incorporate the egg whites by lifting the chocolate with a spatula. The mixture should be very homogeneous.
5. Divide the mousse into glasses and refrigerate for at least
2 hours.


You can enjoy the chocolate mousse with olive oil by adding a small pinch of salt flour!
